The mouth is full and concentrated, with straight and silky tannins. Good length with aromas of liquorice, cocoa and ripe fruit.
The Notre Dame des Pallières vineyards covers thirty hectares and produce respectful famous appellations with regard to nature : Gigondas, Rasteau, Sablet, Lirac & Côtes du Rhône. The wine estate gathers typical grape varieties from the Rhône valley such as Grenache, Mourvèdre & Syrah in order to produce highly traditional vinified quality grapes. The vines find a strong anchor in quaternary river alluvial soils under the Trignon Valley, and the perfect growing conditions due to the favourable micro climate and exceptional sunshine. Isabelle and Julien’s great grandfather, Jules Roux, planted the oldest vines the family have in Gigondas. The Sablet vines, over 40 years old, are located on hillsides which dominate the village for Grenache (clay-limestone subsoil) and near village for Syrah (silico-limestone subsoil).
The selection of old vines is harvested manually and the grapes carefully sorted. All the bunches are then destemmed. The two grape varieties are vinified separately, the maceration lasts approximately 20 days with temperature control. The assembly is carried out at the end of malolactic fermentation.
