The grapes for this come from the family's vines in the village of Rully, planted by Marie’s grandfather between 1947 and 1952. This is appellation Bourgogne on the Rully plain. Delicious attack - what an opener to a tasting! Chewy concentration is a delight, the fruit is zesty and wonderfully textured. The secret in this cellar is so often the careful élevage - and the Aligoté is no exception - 50% is raised in old barrels (5-7 years old) and 50% in stainless steel tanks. The wine has super balance with good richness for Aligoté, zipping citrus juice and lovely texture too - quite full on - but hard to resist, even at this stage.
Traditional methods meticulously applied inspire everything they do: the grapes are harvested by hand and vinified in classical fashion, before an élevage in barrel (up to 25% new wood for the reds, just 20% for the 1er Cru Whites). The domaine has become adept at a sophisticated use of barrels, the élevage here is key to the quality they consistently achieve.
