Côte Chalonnaise is probably the birthplace of Crémant de Bourgogne. Indeed, in 1822 grape growers based in Rully and Mercurey invited a young Champagne winemaker to their estates. Burgundy sparkling wine was born.All over the 19th and 20th centuries, this sparkling production has improved, until the recognition in 1975 of the AOC Crémant de Bourgogne.The soil is made of argilo-calcareous marls.
